Pizza Pans
Aluminium pans do not need to be seasoned as they will not rust. However it is generally considered wise to oil the pans as this helps to create a non-stick finish as well as darkening the pan
'Black Iron' is the term given to products made from mild steel, not to it's colour. More robust than aluminium especially when baking at very high temperatures
The perforated coupe style pans is a heavy duty version of the pizza screen with slightly larger perforations of 5mm, producing a more evenly baked base. Ideal for conveyor ovens and due to the turned up edges they are also perfect for deck ovens.
The hard coat anodise is a process which is only applied to aluminium pans. This hardens the surface of the aluminium and makes the underlying pan more durable. A natural result of this process is the change in colour of the aluminium from silver to a deep, dark grey. The advantage of hard coat anodised pans is that due to their dark colouration they absorb the heat very well and produce a very even bake. They are excellent for proofing dough.
